Here is an easy and economical way to make your own nut milk with no gums, sweeteners or any other unnecessary additives.
1 cup raw almonds
1/8 t. sea salt
1 quart filtered water
Place all of the ingredients together in a large container. Let soak for at least 12 hours (up to 48) at room temperature.
After soaking, strain almonds and rinse in fresh water.
Place in high speed blender (I love my Vitamix!) with 1 quart of clean filtered water and 1/8 teaspoon sea salt. Blend until completely smooth, about 1-2 minutes.
Strain liquid through a nut milk bag. (I like the Cultures for Health muslin own several.)
Refrigerate in an airtight container, preferably glass, and use within 5 days.

This same process can be used to make any kind of nut milk: cashew, Brazil nut, walnut, etc.
